An Artisanal Method

We respect the ancient traditions by employing the processing methods passed down by our ancestors.  During the processing of our meats, which takes place in our labs in Media Valle del Serchio, we only use natural products such as Sale Vero Presidio Slow Food which is a marine whole salt hand-picked at the Culcasi salt mine which is located in the natural park of Trapani and Paceco.
