BOCCONCINI AL TARTUFO CON FARRO E OLIVE (TRUFFLE BOCCONCINI WITH FARRO AND OLIVES)

Serves 4 people

  • 250 gr farro
  • 2 small truffle Bocconi
  • 100 gr pitted green olives
  • Parsley to taste
  • 80 gr ground parmesan cheese

 

Directions

Cook the farro in water, then drain it and add the green olives and roughly ground parsley. Once the mixture has cooled down, add the ground parmesan cheese and the sliced bocconi. Mix everything together and dress with salt and Tuscan olive oil. This is an ideal Winter starter.
